Fall Feast - Celebrate the Flavors of Fall!
September 22 marks the fall equinox and the official beginning of the new season. We’ve all seen the return of pumpkin spice lattes over the past few weeks, but there are so many other flavors, fruits, and veggies that are iconic of the fall season. When planning fall meals and celebrations, don’t forget these delicious seasonal treats!
Apple: The fall apple harvest means hot apple cider, apple cinnamon donuts, caramel apples, apple pies…there are so many ways to incorporate this delicious seasonal fruit into your next meal and gathering. Add a dash of cinnamon, nutmeg, or ginger and these sweet and delicious treats will warm you on those first chilly evenings!
Pomegranate: This little fruit comes into season each fall with celebratory red colors and bright flavors. Not to mention, pomegranates are packed full of vitamins! Try adding pomegranate to your morning yogurt and granola, or spice up a seasonal salad with these delightful little berries.
Pear: Pears are also in season during the fall months and make any meal sweeter. We like to add them sliced thin on sandwiches, or mixed in with a fall garden salad, and of course a pear tart with cinnamon and ginger makes for an enchanting fall desert!
Maple: At The Original Pancake House in Denver we enjoy hot maple syrup year round at our breakfast table, but maple is a great flavor to add to any dish this time of year. We love to make maple pound cake and maple muffins for a yummy fall treat.
Butternut Squash: We love this little gourd even more than pumpkin! A warm bowl of butternut squash soup on a cool evening is a heavenly comfort meal. We always season with a bit of fall spice such as ginger, nutmeg, and a dash of cinnamon.

Pumpkins and Spice and Everything Nice
Halloween is here and Thanksgiving is just around the corner! At The Original Pancake House we’ve been eating Sara’s Pumpkin Pancakes almost every morning, they are so good and we just can’t get enough pumpkin! If you are like us and have pumpkin on the brain, you’ll love these ideas to incorporate this favorite fall ingredient (plus the cinnamon, cloves, and nutmeg!) into as many meals as possible. Read on for some pumpkin-filled food ideas!
Pumpkin Chili Bowls:
Scoop out a mini pumpkin as use it as a “bowl” for your favorite chili recipe. You can even add a bit of pumpkin to the chili itself to add that special sweet flavor of fall!
Pumpkin Casserole Bake:
Choose miniature pumpkins like 'Small Sugar', 'Little Boo', or 'Jack Be Little' to act as individual casserole dishes in which to bake your favorite casserole recipe. One of our favorites is a mix of fresh pumpkin, Israeli couscous, sausage, apples, onion, and cranberries.
Spiced Pumpkin Waffles or Pancakes:
Simply add ½ cup of pumpkin puree to the wet ingredients in your favorite waffle or pancake recipe to make a wonderful pumpkin breakfast at home. We like to add a bit of cinnamon and ginger to the dry ingredients as well to really bring out the pumpkin flavor!

All About Pumpkins!
Halloween is just around the corner and pumpkins abound on almost every front porch in our Denver neighborhood. With this healthy gourd on our mind, we came up with a few ways to incorporate pumpkin into your breakfast recipe repertoire. Read on to learn how you can make pumpkins part of a perfect fall morning with these pumpkin breakfast foods.
Pumpkin Pancakes
We have our own secret pumpkin pancake recipe at Original Pancake House Denver, but here is a variation to try at home. Simply grind the oats with a blender or coffee grinder and combine with the remaining ingredients. Cook pancakes following the standard process and top with pecans and warm syrup!
Ingredients
½ cup oatsl
6 egg whites
¼ cup grams pumpkin puree
2 tsp baking powder
½ tsp pumpkin spice
Splash of vanilla extract
Pumpkin Spice Oatmeal
This healthy fall recipe couldn’t be easier and tastes just like a fresh-baked pumpkin pie! Cook oatmeal according the package instructions. Once water is absorbed and oatmeal is nearly ready, stir in pumpkin puree and fall spices. Top your oatmeal with syrup, yogurt or toasted pecans.
Ingredients
1 cup steel cut oats
1/2 cup pureed pumpkin
2 tsp cinnamon
1 large pinch nutmeg
1 pinch cloves
1/4 tsp cardamom
2 Tblsp maple syrup
Yogurt & toasted pecans (optional but delicious)
Pumpkin Yogurt Parfait
Another healthy fall breakfast treat, this parfait is guaranteed to be a family favorite! This recipe is so easy you could even make it for the family before work and school. Combine granola, pecans and crushed gingersnaps to make the parfait topping. Mix one half of the pumpkin spice with the yogurt and the other half with the pumpkin puree. Alternate layers of yogurt, pumpkin, and toppings and breakfast is ready!
Ingredients
1/4 cup low-fat granola
2 tbsp. pecans, chopped/pieces
2 gingersnap cookies, crushed
1/3 cup 100% pumpkin puree (not pie filling!)
1/3 cup. fat free vanilla Greek yogurt
1/8 Tsp. pumpkin pie spice
