4 Quick, Easy, and Healthy Breakfast Recipes
Breakfast…it’s the meal that starts our day, the meal we look forward to, and the meal we love so much that we even eat it for lunch and dinner at times. But, because it’s usually the first meal of the day, it can also be the one we rush through as we try to get out the door in time. If this sounds like you, we’d like to offer you some suggestions for quick and easy healthy breakfast recipes.
Crock Pot Sausage and Egg Casserole Recipe
Breakfast casserole. This is a super simple, easy to make, healthy breakfast option you can make ahead. By making this casserole on a Sunday night and cutting it into pieces, you can have a healthy breakfast to go at your fingertips for several days in a row. You can even put the ingredients in your crock pot if it’s programmable, and let this casserole cook overnight. (If not, you can still use the crock pot, refrigerate the casserole when it’s done and reheat your portions in the morning.) Here’s a simple recipe to get you started:
Ingredients:
- 1 medium head broccoli chopped
- 1 12- oz package Jones Dairy Farm Little Links cooked and sliced
- 1 cup shredded Cheddar divided
- 10 eggs
- 3/4 cup whipping cream
- 2 cloves garlic minced
- 1/2 tsp salt
- 1/4 tsp pepper
Directions:
- Grease the ceramic interior of a 6 quart slow cooker well.
- Layer one half of the broccoli, half of the sausage and half of the cheese into the slow cooker. Repeat with remaining broccoli, sausage and cheese.
- In a large bowl, whisk eggs, whipping cream, garlic, salt and pepper until well combined. Pour over layered ingredients.
- Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours, until browned on the edges and set in the center.
Eggy Muffins to Go Recipe
Here’s another variation of the egg casserole idea, using spinach or another favorite vegetable instead of broccoli and your muffin tin instead of your crock pot. Personalize these eggy muffins by switching up the ingredients – instead of bacon, use ground beef or ground turkey, or replace the spinach with another favorite veggie like mushrooms. Any way you make them, these little eggy breakfast muffins are a great answer to how to have a quick and easy, healthy breakfast.
Ingredients:
- Cooking spray or paper liners
- 6 eggs
- salt and pepper to taste
- 1/2 cup cooked chopped spinach excess water removed
- 1/3 cup crumbled cooked bacon
- 1/3 cup shredded cheddar cheese
Directions:
- Preheat oven to 375 degrees. Coat 6 muffin cups with cooking spray or line with paper liners.
- Crack eggs into a large bowl. Use a hand blender or whisk to blend the eggs until smooth.
- Add spinach, bacon and cheese to egg mixture and stir to combine.
- Divide the egg mixture among the 6 muffin cups.
- Bake for 15-18 minutes or until the eggs are set.
- Serve immediately or store in the refrigerator until ready to eat.
No-bake Breakfast Granola Bars Recipe
If eggs aren’t your thing, here’s a great recipe for healthy homemade granola bars you’ll love for breakfast.
Ingredients:
- 1heaping cup packed dates (pitted)
- 1/4cup maple syrup, honey, or agave nectar
- 1/4cup creamy salted natural peanut butter or almond butter
- 1cup roasted unsalted almonds (loosely chopped)
- 1 1/2cups rolled oats
- Chocolate chips, dried fruit, nuts, banana chips, vanilla, cinnamon to taste
Directions:
- Process dates in a food processor until only small bits remain. It should form a dough-like consistency. If your dates are not sticky and moist, soak them in water for 10 minutes and drain before processing.
- Optional:Toast your oats (and almonds if raw) in a 350-degree F oven for 10-15 minutes or until slightly golden brown.
- Place oats, almonds and dates in a large mixing bowl and set aside.
- Warm honey and peanut butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dates to disperse throughout.
- Once thoroughly mixed, transfer to an 8x8-inch baking dish or other small pan lined with plastic wrap or parchment paper so they lift out easily.
- Press down firmly until uniformly flattened using something flat like a drinking glass to pack down the bars, which will help them hold together.
- Cover with parchment or plastic wrap and let the bars firm up in fridge or freezer for 15-20 minutes.
- Remove bars from pan and cut into 9 squares. Store in an airtight container for a few days.
Overnight Oats Recipe
This make-ahead breakfast takes advantage of antioxidant rich blueberries and healthy oats. Make ahead and eat cold or heat in the microwave if you prefer this delicious dish warm. Prep time is just five minutes, but this meal processes in the fridge overnight, hence the name!
Ingredients:
- 1/3 cup oats (gluten free or regular)
- ½ cup almond milk (I used Silk Original Light)
- 1 teaspoon chia seeds
- ½ tablespoon maple syrup
- 1 teaspoon vanilla extract
- 2 tablespoons slivered almonds
- ½ medium banana, sliced
- 1/3 cup blueberries
Directions:
- In an airtight container, mix oats, almond milk, chia seeds, maple syrup, and vanilla.
- Seal the container and place in the fridge overnight.
- In the morning, stir oats and top with slivered almonds, sliced banana, and blueberries.
- Grab and go or pop in the microwave for 60 to 90 seconds if you prefer a warm breakfast.

Sinkiang Cinnamon
Ah, cinnamon! This warm, aromatic spice has been used as an ingredient in foods since ancient Egyptian times when it was rare, valuable, and often used as a gift for kings. Cinnamon has long been prized not only for its wonderful taste, but also for its medicinal properties. The health benefits of this very popular spice, made from the inner bark of trees, come from the compound cinnamaldehyde, and include:
- More antioxidants than “superfoods” garlic and oregano
- Anti-inflammatory properties to help lower risk of disease
- Can lower cholesterol, triglycerides and blood pressure
- Helps fight insulin resistance
- Lowers fasting blood sugar levels

What is Sinkiang Cinnamon?
Sinkiang, also spelled Xinjiang and pronounced “shin-ji-yahng”, means “New Frontier” and is the name of a province in Northwestern China, where this special cinnamon is found. It is also called Chinese Turkistan or Eastern Turkistan. Xinjiang is bordered by Pakistan, Tajikistan, Kyrgyzstan, and Kazakhstan on the west and north, by the Republic of Mongolia, Gansu, and Qinghai on the east, and by Tibet and India on the south, and is characterized by mountains and rivers as well as grazing land and agricultural crops (source).
This unique cinnamon does what other cinnamons only dream of; it melts when heated rather than burning like other cinnamons can. 12 Months of Delicious Breakfast!
It’s hard to believe, but Christmas is just around the corner as is the end to another year! 2018 was a good one, filled with many memorable moments shared round a table with family and friends. We feel so lucky to have the support of the Denver community through another year and look forward to what 2019 will bring! As we reflect back on the past year, we like to remember our favorite breakfasts for each month of 2018. Here they are!
January: Bitter cold January is always hallmarked by renewed devotion to healthy eating, especially after our usual holiday indulgence! For January, we love a bowl of our Old Fashioned Oatmeal with skim milk, raisins, and brown sugar!
February: Share the love! In February we always share a plate of Cherry Kijafa Crepes with someone special. Nothing says “I love you” like a delicious breakfast for two!
March: In March we begin to dream of Spring! And with Spring, all we can think of are fresh eggs. Ok, and Easter Bunnies too! In March we love to rotate through our selection of Eggs Benedict dishes, they are all so good!
April: In April, when Spring finally does arrive in the Mile High City, we can’t get enough fresh veggies! We love the Florentine Omelette, filled with fresh spinach, tomatoes, mushrooms and Swiss to celebrate the changing season!
May: We love a zesty and fresh Lemon Poppy Seed Waffle in May! It reminds us of a dish our mother’s would love - a golden brown Belgian waffle baked with lemon zest and poppy seeds, served with fresh whipped butter and homemade warm blueberry compote syrup.
June: Bring on the fresh berries! Each June we celebrate the return of fresh berry season with fresh Strawberry Crepes, fresh Strawberry Waffles, and Blueberry Pancakes!
July: With summer vacation in full swing, we can think of nothing better than a leisurely breakfast on our patio! We usually opt for French Crepes with a side of Fresh Fruit for the warmest days of the year.
August: Back to school month! For all the kids who are sad to see the end of summer vacation, we recommend Chocolate Chip Pancakes to sweeten the mood!
September: September’s golden days have us thinking about cooler weather to come! September also marks green chile season so we always opt for the Pork Green Chile Omelette this time of year!
October: With fall in full swing, we always try Sarah’s Pumpkin Pancakes! They are so delicious and really capture the flavor of the season.
November: November marks the beginning of the holidays and usually brings a bit of chill to Denver. To keep us warm, we love to order Biscuits with Sausage Gravy and Eggs.
December: ‘Tis the season to celebrate! Each December we are so excited to celebrate the return of the OPH holiday specials! The Ho! Ho! Ho! Plate and special holiday sausage links are our favorites!

The holidays are here! At the Original Pancake House in Denver, we’ve been celebrating the season already with the return of our holiday specials menu, you can check out all the scrumptious holiday treats we have for breakfast in Denver here! For many of us, the holiday season means we have a full house with family and friends and neighbors coming to call. So how do you prepare to feed a crowd for holiday breakfast or brunch? You go BIG and make a big batch breakfast to feed a crowd. Here are a few of our favorite breakfast ideas for large groups for this holiday season!
Your family and friends will love the Tex-Mex flavors in this recipe (courtesy of Southern Living Magazine). Eggs combined with milk, tortilla, peppers, onion, jack cheese and chiles make a delicious and flavorful breakfast casserole. We also love this recipe because it works best if you prepare it the night before. That means on the morning of your large holiday brunch, you just pop it in the oven with no prep or clean-up! That’s a win in our book.
Baked Eggs with Chorizo and Potatoes
Crispy chorizo and potatoes topped with eggs all baked together in a big cast-iron skillet - what’s not to love? This hearty and flavorful breakfast is sure to be a crowd pleaser and covers all breakfast staples in one big pan. YUM.
For those with a sweet tooth, this recipe is for you! Glazed with honey and topped with seasonal and nutty pecans, these breakfast rolls are delightful and work well to bring as a hostess gift or to act as the centerpiece on your breakfast table. Serve these pecan honey buns to a large group of guests with a yogurt bar and breakfast is done!
Who doesn’t enjoy a breakfast pie this time of year? Quiche are so pretty and easy to make in advance. You can even save time by using store-bought dough. When we’re preparing breakfast for a large crowd, we like to make a few different quiche options to satisfy every taste. Our favorites include classic ham and cheddar, spinach and gruyere, and bacon and potato. One of the best features of quiche is that you can put almost anything in them and come up with a delicious breakfast meal for your family and friends!

Hometown Hero: What Should Phillip Lindsay Eat for Breakfast?
By now we all know Phillip Lindsay, one of the star running backs for the Denver Broncos. Though he is only 24, Phillip has been a standout in Colorado football for many years. Born in Aurora, Colorado, Phillip attended South High School in Denver where he became the school's all-time leading rusher with 4,587 yards. He then went on to play for the University of Colorado in Boulder where he set the school record in all-purpose yards (5,760) and yards from scrimmage (4,683). Not bad! With a record like that it is no surprise that the Denver Broncos scooped him up this year. And thus far this season, he has not disappointed local fans!
As a Denver breakfast restaurant, we are naturally curious to know what Phillip Lindsay eats for breakfast. (Phillip, if you are reading this, let us know!) Our best guess is that he’s on a fairly strict diet fit for a pro-athlete. Most athletes will start the day with a large breakfast mixing lean protein, carbs, and fats. Based on nutritionist recommendations, we have a few ideas for what Phillip Lindsay, and all those other aspiring NFL players out there, should have for breakfast!
Carbs:
All nutritionist agree that athletes need healthy carbohydrates to fuel them on the field. Healthy carbs might include fruit, veggies, whole grain cereal like oatmeal, or whole grain toast. With this recommendation in mind, we think Phillip should try our Fiesta Bowl which includes non-fat greek yogurt, homemade granola, and fresh seasonal fruit, or perhaps a bowl of our Old Fashioned Oatmeal topped with skim milk, brown sugar and raisins.
Protein:
All athletes need protein to help build muscle and provide sustained energy on the field. Great sources of breakfast protein (which also contain fats) are eggs, nuts, seeds, peanut butter, milk, cheese, yogurt and meat. At the Original Pancake House in Denver, we think Phillip Lindsay might enjoy our Vegetarian Omelette, with fresh broccoli, tomatoes, onions, and swiss, or perhaps our Mediterranean Omelette filled with fresh spinach, sun dried tomatoes and feta. Either way, he’d be getting a good serving of healthy protein and veggies. He might also enjoy adding our Turkey Sausage Patties on the side for extra energy!

Kids and adults alike love fall goodies and pumpkin breakfast treats so we’ve collected a few ideas to incorporate pumpkin into our favorite meal of the day. Eggs in a Mini Pumpkin
Recipe Concept from Everyday Southwest
Now, this is quite possibly the cutest idea we’ve ever seen to incorporate pumpkin into your breakfast repertoire. We love the idea of making these for brunch to wow our guests, and what a great use for all those tiny pumpkins! To make this dish, preheat your oven to 375 degrees. Next, cut the tops off the mini pumpkins about one-third of the way down the pumpkin so that the top makes a nice lid but the center of the lower half is deep enough to hold an egg. Scoop out the seeds and use a spoon to scrape away any of the membranes to make a nice smooth bowl. Cover the stems with foil. Place the pumpkins on a foil-lined baking sheet, cut side down. Bake the pumpkins for 8 minutes. Remove from the oven. Quickly brush the inside of the pumpkins with a little olive oil and season with salt and pepper. Crack one egg into the center of each pumpkin. Return the baking sheet to the oven before the pumpkins cool down and continue baking until the eggs are sunny side up, or set whites with runny yolk, about 6 to 8 minutes. Once eggs are set, remove from oven and sprinkle with salt and pepper. We love the idea of serving this pumpkin breakfast dish with bacon and hashbrowns!
Pumpkin Crepes
Recipe Concept from Simplistically Living
This recipe for pumpkin breakfast crepes looks so delicious, we can’t wait to try it at home!
Ingredients for the Crepes:
- 2 Eggs
- 1 Cup Flour
- 1 Cup Milk
- ½ Cup Water
- 2 Tablespoons Melted butter
Ingredients for the Pumpkin Filling:
- 4 Tablespoons Canned Pumpkin (or more if desired)
- 8 oz Softened Cream Cheese
- 2 Cups Heavy Whipping Cream
- ½ Cup Powdered Sugar
- Pumpkin Spice (sprinkle on top of crepes-optional)
Instructions
- In a large bowl mix all wet ingredients first then add in the flour. Mix well. Note: mixture will be runny.
- Heat a small skillet to medium heat and then spray it with oil so that the crepe won’t stick.
- Add about ¼ Cup of crepe mixture into the hot skillet and pick it up and swirl it into the size of the bottom of the pan.
- Cook for about 30 seconds to a minute and then flip on the other side and repeat. Note: it should be just a tiny bit brown on some spots for it to be done.
- Cook remainder of the crepe batter and then set aside.
- To make the pumpkin filling whip the softened cream cheese in a large bowl. Set aside.
- Whip the cold 2 Cups of heavy whipping cream with the ½ Cup powdered sugar until stiff peaks form.
- Add whipped cream into cream cheese bowl and blend until mixed. At this point, I like to reserve some of this mixture for piping some on top of the crepes, then sprinkling with the cinnamon. But, you could just use the remainder after you put the canned pumpkin in. I just like the look of the white.
- Fold in the pumpkin (as much as you desire…taste as you go!)
- Add filling to the crepe by lining the middle of the crepe and then roll it up.
- Pipe some filling on top and then sprinkle with some pumpkin spice.

Apple Pancake - For those of us with an apple tree in our yards in Denver, we know it is apple season, and what a harvest this year!
