The Value of Family Traditions
Traditions; they reinforce who we are, where we came from, and bind us together by a common, shared experience. The official dictionary definition of tradition reads, “The transmission of customs or beliefs from generation to generation; the handing down of statements, beliefs, legends, customs, information, etc., from generation to generation, especially by word of mouth or by practice.”
Why Do We Have Family Traditions?
What are some of your favorite family traditions? Maybe you always have family game night on the first Saturday of every month? Do you open one gift under the tree on Christmas Eve every year? Do you usher in summer with a Memorial Day road trip? Do you gather on New Year’s Eve to watch the celebration in Times Square? Is there a special family recipe for a dish you only make on special occasions?
No matter what your family traditions may be, they help knit your family members together by sharing events or activities that you can enjoy and remember fondly from year to year and pass down to your children or grandchildren.
Family Traditions Strengthen Families
Family traditions help new family members, also. When someone new enters the family, learning and participating in family traditions helps the new member gain a deeper appreciation and understanding of their family and feel like a part of the whole, rather than an outsider. Family traditions help the family embrace the new member and offer a sense of inclusion.
At the Original Pancake House Denver, we understand the value of maintaining family traditions. We celebrate tradition every day with the breakfast food we serve our customers; food that is steeped in tradition, culture, family – and made with love. Although love is the true tie that binds family members together, traditions help reinforce, strengthen, and express that familial love in a concrete way. Family traditions are something the younger members can learn from and look forward to, and something the older family members can enjoy passing down to the next generation to help give them a sense of family, culture, and history.

What Is Sourdough Starter?
Love that wonderful smell of bread baking in your kitchen or the neighborhood bakery? You know what I’m talking about. We get to smell it every day when we pop the top off our sourdough starter barrel to infuse our pancake batters with their special ingredient.
What is sourdough starter? Simply stated, our sourdough starter is a combination of potato yeast, flour and sugar which we ferment for seven days into an alcoholic compound that’s been the secret ingredient in our pancakes for over 50 years. Do we have to do it? Of course not. Doesn’t everybody do it? Not anymore. It’s a tradition we keep alive because it quite simply makes the best pancakes you can find.
We make sourdough starter in our own kitchen two or three times a week. It’s a product that must be supervised and tested throughout every step of its long process. We then add it to all our batters that contain buttermilk as the base. The finished batter then is used to create our beautifully light, fluffy, flavorful pancakes. We also use it to create our mouthwatering Sourdough Flap Jacks.
Why We Use Sourdough Starter
The fermentation process provides better flavor. The souring of grains has been practiced for generations and makes familiar foods taste better than their non-fermented counterparts. Sourdough starter also actually boosts the flavors of toppings – namely natural fats and sweeteners – you like to add to your finished pancakes. It’s this sweet – rich – tangy flavor combination that makes our pancakes simply irresistible.
The fermentation process breaks down the fibers in whole grain flour. This process helps our pancakes attain their light, fluffy, delectable texture customers have come to love. It also makes grains easier to digest since the fiber is broken down before it even enters your digestive system. So as a prebiotic, sourdough starter helps support a healthy gut.
The fermentation process enhances the vitamin content of food. This is most generally seen with B vitamins, as fermentation often increases or imparts B vitamins beyond what the raw food being fermented naturally contains (source).
Sourdough became extremely popular in San Francisco during the Gold Rush in 1849 when miners were known to carry the starter in pouches on their bodies to protect this precious commodity from freezing. California Klondike miners were even given the nickname “sourdoughs” because of their fondness for the bread. Known for its uniquely sour, tangy taste and chewiness, San Francisco sourdough bread can still be purchased at Boudin Bakery, originally opened at the height of the Gold Rush in 1849. Our own traditional, plate sized 49’er Flap Jacks are a tribute to this tradition near our roots in Oregon.

4 Quick, Easy, and Healthy Breakfast Recipes
Breakfast…it’s the meal that starts our day, the meal we look forward to, and the meal we love so much that we even eat it for lunch and dinner at times. But, because it’s usually the first meal of the day, it can also be the one we rush through as we try to get out the door in time. If this sounds like you, we’d like to offer you some suggestions for quick and easy healthy breakfast recipes.
Crock Pot Sausage and Egg Casserole Recipe
Breakfast casserole. This is a super simple, easy to make, healthy breakfast option you can make ahead. By making this casserole on a Sunday night and cutting it into pieces, you can have a healthy breakfast to go at your fingertips for several days in a row. You can even put the ingredients in your crock pot if it’s programmable, and let this casserole cook overnight. (If not, you can still use the crock pot, refrigerate the casserole when it’s done and reheat your portions in the morning.) Here’s a simple recipe to get you started:
Ingredients:
- 1 medium head broccoli chopped
- 1 12- oz package Jones Dairy Farm Little Links cooked and sliced
- 1 cup shredded Cheddar divided
- 10 eggs
- 3/4 cup whipping cream
- 2 cloves garlic minced
- 1/2 tsp salt
- 1/4 tsp pepper
Directions:
- Grease the ceramic interior of a 6 quart slow cooker well.
- Layer one half of the broccoli, half of the sausage and half of the cheese into the slow cooker. Repeat with remaining broccoli, sausage and cheese.
- In a large bowl, whisk eggs, whipping cream, garlic, salt and pepper until well combined. Pour over layered ingredients.
- Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours, until browned on the edges and set in the center.
Eggy Muffins to Go Recipe
Here’s another variation of the egg casserole idea, using spinach or another favorite vegetable instead of broccoli and your muffin tin instead of your crock pot. Personalize these eggy muffins by switching up the ingredients – instead of bacon, use ground beef or ground turkey, or replace the spinach with another favorite veggie like mushrooms. Any way you make them, these little eggy breakfast muffins are a great answer to how to have a quick and easy, healthy breakfast.
Ingredients:
- Cooking spray or paper liners
- 6 eggs
- salt and pepper to taste
- 1/2 cup cooked chopped spinach excess water removed
- 1/3 cup crumbled cooked bacon
- 1/3 cup shredded cheddar cheese
Directions:
- Preheat oven to 375 degrees. Coat 6 muffin cups with cooking spray or line with paper liners.
- Crack eggs into a large bowl. Use a hand blender or whisk to blend the eggs until smooth.
- Add spinach, bacon and cheese to egg mixture and stir to combine.
- Divide the egg mixture among the 6 muffin cups.
- Bake for 15-18 minutes or until the eggs are set.
- Serve immediately or store in the refrigerator until ready to eat.
No-bake Breakfast Granola Bars Recipe
If eggs aren’t your thing, here’s a great recipe for healthy homemade granola bars you’ll love for breakfast.
Ingredients:
- 1heaping cup packed dates (pitted)
- 1/4cup maple syrup, honey, or agave nectar
- 1/4cup creamy salted natural peanut butter or almond butter
- 1cup roasted unsalted almonds (loosely chopped)
- 1 1/2cups rolled oats
- Chocolate chips, dried fruit, nuts, banana chips, vanilla, cinnamon to taste
Directions:
- Process dates in a food processor until only small bits remain. It should form a dough-like consistency. If your dates are not sticky and moist, soak them in water for 10 minutes and drain before processing.
- Optional:Toast your oats (and almonds if raw) in a 350-degree F oven for 10-15 minutes or until slightly golden brown.
- Place oats, almonds and dates in a large mixing bowl and set aside.
- Warm honey and peanut butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dates to disperse throughout.
- Once thoroughly mixed, transfer to an 8x8-inch baking dish or other small pan lined with plastic wrap or parchment paper so they lift out easily.
- Press down firmly until uniformly flattened using something flat like a drinking glass to pack down the bars, which will help them hold together.
- Cover with parchment or plastic wrap and let the bars firm up in fridge or freezer for 15-20 minutes.
- Remove bars from pan and cut into 9 squares. Store in an airtight container for a few days.
Overnight Oats Recipe
This make-ahead breakfast takes advantage of antioxidant rich blueberries and healthy oats. Make ahead and eat cold or heat in the microwave if you prefer this delicious dish warm. Prep time is just five minutes, but this meal processes in the fridge overnight, hence the name!
Ingredients:
- 1/3 cup oats (gluten free or regular)
- ½ cup almond milk (I used Silk Original Light)
- 1 teaspoon chia seeds
- ½ tablespoon maple syrup
- 1 teaspoon vanilla extract
- 2 tablespoons slivered almonds
- ½ medium banana, sliced
- 1/3 cup blueberries
Directions:
- In an airtight container, mix oats, almond milk, chia seeds, maple syrup, and vanilla.
- Seal the container and place in the fridge overnight.
- In the morning, stir oats and top with slivered almonds, sliced banana, and blueberries.
- Grab and go or pop in the microwave for 60 to 90 seconds if you prefer a warm breakfast.

Sinkiang Cinnamon
Ah, cinnamon! This warm, aromatic spice has been used as an ingredient in foods since ancient Egyptian times when it was rare, valuable, and often used as a gift for kings. Cinnamon has long been prized not only for its wonderful taste, but also for its medicinal properties. The health benefits of this very popular spice, made from the inner bark of trees, come from the compound cinnamaldehyde, and include:
- More antioxidants than “superfoods” garlic and oregano
- Anti-inflammatory properties to help lower risk of disease
- Can lower cholesterol, triglycerides and blood pressure
- Helps fight insulin resistance
- Lowers fasting blood sugar levels
- Helps fight fungal and bacterial infections
- Reduces bad breath and helps fight tooth decay
The great thing about this wonderfully aromatic spice is not just the fact that it’s loaded with all the health benefits listed above, but it also tastes divine! At the Original Pancake House, we have a special fondness for the taste of cinnamon, and our famous Apple Pancakes with cinnamon glaze take advantage of the unique properties of a very special type of cinnamon called Sinkiang cinnamon.
What is Sinkiang Cinnamon?
Sinkiang, also spelled Xinjiang and pronounced “shin-ji-yahng”, means “New Frontier” and is the name of a province in Northwestern China, where this special cinnamon is found. It is also called Chinese Turkistan or Eastern Turkistan. Xinjiang is bordered by Pakistan, Tajikistan, Kyrgyzstan, and Kazakhstan on the west and north, by the Republic of Mongolia, Gansu, and Qinghai on the east, and by Tibet and India on the south, and is characterized by mountains and rivers as well as grazing land and agricultural crops (source).
This unique cinnamon does what other cinnamons only dream of; it melts when heated rather than burning like other cinnamons can. This characteristic makes Sinkiang cinnamon absolutely perfect for our delicious apple pancakes, oven baked with fresh granny smith apples and covered in decadent pure Sinkiang Cinnamon glaze. This signature dish may take a few minutes more to prepare, but when it arrives piping hot from the oven straight to your table, you’ll know with the very first bite that it was well worth the wait! It’s a breakfast you’ll fall in love with, and probably will want to tell everyone about, but these apple pancakes smothered in rich, warm, mouthwatering purse Sinkiang cinnamon glaze are so delicious you might be tempted not to say a word, so you can keep this delicious secret all to yourself!
Stop by and visit us soon at The Original Pancake House, with two locations in the Denver area at Cherry Hills or Denver Tech Center, and try our Apple Pancakes with Cinnamon Glaze. You’ll love the homemade goodness that makes breakfast at America’s finest pancake house a great idea any day of the week from 6:00 am to 2:00 pm. We look forward to welcoming you and your family!

Breakfast Smoothies
A Smooth Breakfast
Around 28% male and 18% female respondents ages 18 to 34 regularly skip breakfast. According to the CDC, only one in ten adults consumes the recommended daily amount of fruits and vegetables. Without eating enough fresh produce, it’s difficult for us to get the amount of dietary fiber or the vitamins and minerals we need for optimum health.
This is a problem because of the correlation between missing breakfast, the most important meal of the day, and the chances of developing artery disease. With jobs to go to, and families to get ready for school, it’s no wonder many of us struggle. And eating first thing in the morning isn’t appealing to everyone. But starting the day with a healthy breakfast smoothie is exactly what you need to fuel a happy and productive day, helping to keep illness at bay.
The Answer In A Breakfast Smoothie
If you struggle to get breakfast in the morning, you might find yourself resorting to a mid-morning sugar rush, but there’s a healthier way to satisfy that hunger craving. Whether the problem is a busy morning schedule or a lack of inclination to eat early enough to leave the house on time, a smoothie could be the answer to your predicament. A breakfast smoothie is a tasty way of delivering a wealth of nutritional goodness to your body without having to spend very much time in the kitchen.
Ten Minutes In The Morning
Your breakfast smoothie will be beautiful no matter how rough your chopping. From apple and cinnamon to banana and blueberry, there’s a flavor out there to suit your tastes. With Colorado’s rich harvest of apples, peaches and apricots, you’re in the right place for delicious fresh ingredients. So long as you have your favorite fruits and vegetables on hand, you can make a speedy job of hacking them into chunks and throwing them in the blender. What a great excuse for another Palisade peach! No time to drink up before you leave? No problem: just tip your smoothie into a flask and head out. Many blenders even come with lidded travel cups for exactly this purpose.
Make Ahead
Even that ten minutes chopping time could be more than you can spare in your busy morning, but that doesn’t mean a smoothie couldn’t still be your answer. Try chopping your ingredients in bulk on a rainy Sunday and portioning them out into freezer bags ready to tip into the blender and whizz up quickly before you leave for work. If you have space in the freezer, you can even do your blending in advance. Invest in some freezer-safe mason jars for your ready-made smoothies. Just remember to take them out the night before to avoid smoothie ice lollipops.
Reap The Benefits
Starting your day with a breakfast smoothie can boost your energy, aid digestion and benefit your immune system. And if you’ve had your morning meal, you’re much less likely to reach for that cookie at 11 O’clock, avoiding the price of a sugar crash later in the day.
Whether you’re someone who just can’t face eating before sunrise, or your morning’s just too packed for eggs on toast, a smoothie may well be the answer to making sure you eat well in the morning, so grab your blender and get those creative juices flowing.
Visit The Original Pancake House in the Denver Tech Center or Cherry Hills and reap all your breakfast benefits. Leave the preparation to us. We serve fresh fruit every day on delicious dishes like Strawberry French Toast. We also have quick, lighter items such as Greek yogurt, homemade granola and old-fashioned thick rolled oats. 3 Egg Dishes
Are you looking for some new and different breakfast ideas with eggs? Eggs are loaded with all sorts of good, healthy nutrients that our bodies need, and the egg is a very versatile food. Egg dishes are popular for breakfast, lunch, and dinner, and there are lots of easy and fun ways to prepare them. Some traditional breakfast egg dishes include egg plates with poached, fried, or classic scrambled eggs with a side of bacon, a slice of toast, and sometimes seasonal fruit. But, there are so many other ways to enjoy this wonderful, wholesome food! Here are just a few of the many breakfast, lunch, and dinner egg dishes you can enjoy:
Omelettes
Eggs are packed with high-quality proteins, vitamins, minerals, good fats and trace nutrients, and vegetables provide fiber our bodies need for good digestion and help protect against disease. Omelettes are a super popular way to get your eggs and veggies in at the same time. Did you know that egg white omelettes have 170 fewer calories than traditional omelettes? If you’re looking for a way to go a little lighter with your breakfast meal, this is a great choice. You can add meat to your omelettes as well, bumping up the protein content and creating a breakfast that will fuel your body with healthy ingredients for hours.
Eggs Benedict
At The Original Pancake House, some of our most popular breakfast items feature healthy, good-for-you eggs. Our famous egg dishes include Eggs Benedict, a classic breakfast choice for all ages. This mouthwatering recipe involves toasting an English muffin, cutting it in half, and placing a delicious piece of ham topped with a perfectly poached egg on each side, and smothering the whole yummy concoction with a creamy delicious Hollandaise sauce. You’re probably getting hungry just reading about it, aren’t you? We understand because we love Eggs Benedict so much we serve four fantastic variations! Next time you’re in our neighborhood, stop in and try one; it just might become your new favorite breakfast.
Egg Sandwiches
For an easy, quick, portable way to enjoy your favorite egg dishes, make them into sandwiches! Whether you do an open-faced Eggs Benedict style sandwich or a simple scrambled egg sandwich, this is a great way to partake of all the good things eggs have to offer. Some people like to add lettuce, bacon, and tomato to their egg sandwich (or is that adding an egg to your BLT?), while still others like to make egg salad sandwiches from hard-boiled eggs blended with mayonnaise that can be enjoyed cold.

Here are a few of our favorite fall dishes to celebrate the season!
Sara’s Pumpkin Pancakes - Is there anything that says “fall” more than pumpkin? Not in our book! Sara’s Pumpkin Pancakes are better than pie. Doctored up with rich pumpkin, molasses and pie spices, these rich fall pancakes are served with a choice of butter or homemade fresh whipped cream.
Apple Pancake - For those of us with an apple tree in our yards in Denver, we know it is apple season, and what a harvest this year! To celebrate this amazing fruit, we love to find a friend and cozy up to one of our giant Apple Pancakes. These huge culinary creations are an OPH tradition. Our Apple Pancake is oven baked to make it custardy and crisp, and is then covered with Sinkiang cinnamon sugar glazed Granny Smith apple slices. Amazing!
Pecan Pancakes - Toasty and delicious pecans remind us of cool, crisp mornings with every crunchy bite! Our pecan pancakes are a fantastic showcase for this little nut. We take our made-from-scratch buttermilk pancakes and fill and top them with warm toasted pecans. We finish these fall pancakes off with a dusting of powdered sugar and homemade warm tropical syrup.
And of finally, for that first frost or snow we all know is coming, we love to order a pork green chile omelette. Our fluffy oven-baked omelette is filled with pepper jack cheese and smothered with locally made pork green chile sauce, just the thing you need to warm you on a chilly morning.
Come visit us this season for an autumn treat in Cherry Hills or the Denver Tech Center. We hope to see you next time you head out to enjoy some fall breakfast foods in Denver! From all of us at The Original Pancake House in Denver, happy fall!
Breakfast Battle: Sausage vs. Bacon
Can you pick a side in the sausage vs. bacon battle?
When it comes to the battle of the breakfast meats, sausage vs. bacon, which team are you rooting for? When you take into account that 908 million pounds of bacon were sold in 2015, you might think that Team Bacon comes out on top. However, a 2016 Harris Poll conducted for the National Hot Dog and Sausage Council found that a majority of Americans, 89% of the respondents, favor sausage overall. The poll found a wide variety in the types of sausage that American diners prefer – Italian and patties tied for favorite among respondents at 20% each with breakfast links at 15% and bratwurst at 12%.
But let’s not diminish the role that bacon plays in our hearts and on the table. 2015 sales of the cured meat totaled $4.21 billion, according to the North American Meat Institute. This was a 5.4% year-over-year increase in sales. And in a survey conducted by pork supplier Smithfield, 65% of people said they would support a petition that declared bacon as America’s national food.
Going back to Team Sausage, from 2011 to 2016, sausage consumption in America steadily rose from 231.88 million consumers to 246.81 million, according to a 2016 Simmons Profile Report.
When it comes to the sausage vs. bacon battle, at The Original Pancake House in Denver we won’t choose sides because we love them both. We offer a number of delicious choices including honey cured bacon, turkey sausage, and our special recipe sausage patties and links. Visit us soon to taste them and pick a team if you dare!
Green Chile: The Darling of Denver Restaurants
Menus at Denver restaurants aren’t complete without this local favorite.
No matter what breakfast restaurant you go to anywhere in America, there are some dishes that will undoubtedly appear on every single menu. Pancakes, French toast, waffles, and omelettes, to name just a few. But every breakfast restaurant is bound to have a few signature dishes that are local or regional specialties. If you dine out at Denver restaurants, you know that you will find green chile on a lot of menus. Green chile (or chili) is a specialty of New Mexico, and by proximity, the Rocky Mountain region. No menu at Denver restaurants is complete without at least one item featuring this delicious, spicy concoction. If you order huevos rancheros in Denver, you can bet the eggs will be smothered in green chile. As will your breakfast burrito. When you come to The Original Pancake House, you’ll find it on top of the Green Chile Eggs Benedict, along with tomato, avocado, chorizo sausage and pepper jack cheese.
Chile peppers, both red and green, are a staple of New Mexican cuisine. While red chile in its sauce form is generally used for covering enchiladas, burritos and more, green chile is hearty and often doubles as both sauce and as a soup or stew. Chile peppers, which are technically a fruit, have been around for thousands of years. They were used by the Inca, Mayan and Aztec civilizations in both culinary and medicinal applications. It is generally believed that Columbus first encountered chiles in the Caribbean and the curious spicy pepper was brought back to Spain by the ships doctor Diego Alvarez Chanco, who first wrote of their medicinal properties in 1494.
Today chile peppers are a major industry in New Mexico and the Hatch Valley is renowned for its production of the Hatch chile, a hybrid of the Chile Negro, Chile Colorado and Chile Pasilla. It was created by horticulturist Fabian Garcia after 10 years of experimenting to find the perfect chile and was originally known as New Mexico Chile No. 9. Chile-heads around the globe owe Mr. Garcia a great deal of thanks, as do patrons of Denver restaurants when they dig into a bowl of green chile, or enjoy something smothered with the iconic sauce.
Is Hash Your Favorite Breakfast in Denver?
Hash, particularly corned beef hash, is always a popular choice for breakfast in Denver and all around the country. This simple and comforting dish is made from chopped meat and potatoes cooked together with spices and often vegetables like onions or bell peppers. While there are many varieties of hash, corned beef is perhaps the most popular and definitely one of our favorite choices at The Original Pancake House.
Like many other dishes, hash was developed as a way to utilize leftovers. If you have a piece of cooked meat left over from dinner, you can easily extend that into breakfast by adding potatoes and vegetables. Corned beef hash specifically developed in England in Ireland as a second act for the traditional corned beef and cabbage dinner.
The hearty dish gained popularity in America during the World War II era and has been beloved ever since. Nowadays you can order hash of all varieties at restaurants across the country.
If you’re craving some corned beef hash for breakfast in Denver you won’t want to miss ours at The Original Pancake House. We serve it with two basted eggs and a stack of three of our signature pancakes. You can’t beat a hearty breakfast with both sweet and savory elements!
