Breakfast for Dinner!

At the Original Pancake House in Denver, we believe breakfast is the best meal of the day.  It seems like a shame to only have breakfast once per day, so sometimes we like to make breakfast again and treat our family to ‘breakfast-for-dinner!’  If you like to have your bacon and eggs multiple times a day, here are a few great breakfast-for-dinner recipes to try!

Breakfast Burritos - Easy and fun to assemble, these breakfast burritos will be a crowd pleaser!  Choose your favorite fillings - eggs, sausage, bacon, hash browns, potatoes, cheese and then offer a variety of fun toppings like green chile sauce or salsa. Best of all, you can have the whole meal ready and on the table in 15 minutes. Here is an easy recipe courtesy of the Pioneer Woman and Food Network.  

Chicken and Waffles - Sweet and savory flavors meld oh-so-well in this classic southern dish.  Simply make your favorite waffles, pan fry a batch of chicken, and top it all off with syrup.  Kids will love the idea of pouring syrup all over their dinner and adults will love the homey goodness! Try this tasty classic recipe from Grandbaby Cakes.

Corned Beef Hash - A perfect winter warmer, corned beef hash makes a great meal any time of day.  To save time you can buy corned beef already prepared from your local deli.  Then simply bake with potatoes and seasonings, and top with a runny egg.  Yum!  Try this recipe from Bon Appetit.

Easter has hopped on...what do you do with all those eggs?

So you have a fridge full of hard boiled eggs and an enormous hunk of ham leftover from your Easter egg hunt and Easter dinner?  One of the best things about any holiday is the leftovers!  But sometimes you have to get creative.  Here are a few scrumptious ideas for your Easter leftovers.

 

Easter Leftover Sandwich - This is the ultimate leftover meal for Easter as it puts all your leftover items to good use.  Biscuits topped with ham, egg salad, lettuce, tomato, and avocado?  Hope you have a hearty appetite for this delicious leftover lunch!

 

Ham and Cheese Quesadillas - Turn your Easter leftovers into dinner with ham and cheese quesadillas.  This recipe uses just four ingredients and is kid-friendly!  You can use any type of cheese, chop up that giant hunk of leftover Easter ham, and serve with fruit salad or veggies for dinner.

 

Ham and Cheese Potato Casserole - Yum.  This crowd pleasing dish is comfort food at its best.  Plus you can make one and freeze one and use up all your leftover ham before the week is out!

 

Deviled Eggs - If those all those hard boiled eggs are losing their appeal at breakfast, try making them into deviled eggs for an afternoon snack or hearty appetizer.  Add a bit of spice to kick them up a notch!

Cool Breakfast Treats to Beat the Summer Heat!

Fiesta BowlEvery year in Denver we have a few weeks that are just plain hot.  When the thermometer has already reached 80 degrees before breakfast, sometimes you need a cool treat to start your day off on the right note.  Here are a few ideas for a refreshing morning meal!

Frozen Nutty Banana:

Cut one firm (but ripe) banana in half and un-peal. Arrange on a small baking sheet or freezer-safe plate, and spread each half evenly with 1 tablespoon of nut butter. Next add toppings such as granola, chia seeds, or flax seeds and cinnamon. Insert a popsicle stick or skewer into the cut end of each half, and freeze until solid (at least 2-3 hours).

 

Breakfast Parfait:

Grab a large glass or ice cream bowl andadd a scoop of your favorite yogurt, fruit and granola.  Continue adding layers until the glass or bowl is full.  Enjoy!

 

Breakfast Smoothie:

Blend one cup of milk, almond milk, or soy milk with ice and one cup of frozen or fresh fruit.  Berries and bananas work best!  For a thicker shake and extra calcium, add a little yogurt to your blender.  For an alternative to the classic fruit smoothie, replace the fruit and yogurt with a banana and 2 tablespoons of peanut or almond butter and blend until smooth.

 

Nutty Apple:

Select a large apple and slice in half.  Remove the core, plus a little additional apple flesh to create a large hole in the center of each half.  Fill each hole with peanut or sunflower butter and granola and reassemble apple.  Wrap the apple in aluminum foil or plastic wrap and enjoy on the run!
